Overview

Nutri Jalwatri consists of the dried, lacy covering that naturally surrounds the Jaifal seed. Although both spices come from the same fruit, Javitri has its own distinctive character, offering a more delicate, floral and peppery aroma than whole nutmeg. Use Jalwatri in biryani, pulao, qorma, curries, yakhni, meat preparations and homemade garam masala. It can also add warm aromatic depth to custards, puddings, baked foods, milk-based desserts and selected beverages. The whole blades release their flavour gradually during cooking and may be lightly toasted and ground when a finer, more evenly distributed spice is required.

Taste & Texture

Warm, intensely aromatic and gently sweet-spiced with floral, citrusy, woody and peppery notes and a lightly bitter finish. Its flavour resembles nutmeg but is generally more delicate, fragrant and slightly sharper. The dried blades have a thin, lacy, brittle and fibrous texture. They soften slightly during cooking but usually remain noticeable in the finished dish.

A plant-based whole spice suitable for vegetarian and vegan diets. Intended for measured culinary use as a flavouring, seasoning, baking or cooking ingredient.

Usage

Add Nutri Jalwatri gradually according to the selected recipe, as its fragrance and flavour are naturally concentrated. Use a small whole blade in biryani, pulao, stock, gravy or slow-cooked curry for gradual infusion. Lightly break the blade when quicker flavour release is preferred, or place it in a muslin spice pouch for convenient removal. Jalwatri may also be lightly toasted over gentle heat, cooled and ground before being added to garam masala, kebab mixtures, desserts or baked preparations. Avoid burning the delicate blades, as excessive heat may produce an overly bitter flavour.

Serving Ideas

Use Jalwatri in chicken biryani, mutton pulao, beef yakhni, qorma, nihari-style gravies, kebab mixtures and slow-cooked curries. Combine it with cardamom, cinnamon, cloves, black pepper and other preferred spices in homemade garam masala. Add a small measured quantity to kheer, firni, custard, rice pudding, halwa and milk-based desserts. Ground Jalwatri can also be incorporated into cakes, biscuits, sweet breads, sauces and selected warm beverages. Remove whole mace blades before serving where appropriate.
